Three to four servings
Hold on! You have got to try these ribs. They are simple to make, and they are sooooooo good! They take a little while to cook, but not much hands-on is needed. You can serve them as an appetizer or as a main dish. They are great for parties. You will have the wonderful barbecue flavor without having to go outside and dirty the grill. I love ribs off the grill, but when it is raining, I don’t want to stand outside and babysit ribs.
Ingredients
For the pork
3 pounds pork ribs
2 teaspoons salt
1 tablespoon freshly ground black pepper
2 teaspoons granulated garlic
1 tablespoon of your favorite barbecue rub
As needed, nonstick cooking spray
For the glaze
Mix together the following:
2 tablespoons Worcestershire sauce
2 tablespoons soy sauce
4 tablespoons hot-pepper jelly
1 cup of your favorite barbecue sauce
Note: I used homemade red-jalapeno-pepper jelly and Open Pit Barbecue Sauce-Original.
Procedure
Sprinkle the seasonings evenly on the pork ribs (all sides).
Line the inside of a baking pan with foil. Spray the foil with nonstick cooking spray.
Place the seasoned pork ribs on the foil.
Bake the pork ribs at 250 degrees for two hours.
Cover the pork ribs with foil. Seal the foil tightly around the edges of the pan so that the steam does not escape.
Return the pork ribs to the oven for another two hours.
Remove the pork ribs from the oven and cut them into desired portions.
Turn the broiler on high.
Brush the glaze evenly on the pork ribs and place them back in the pan. Broil. Turn the pork ribs as they start to get brown and sticky. Repeat this process until the glaze is gone.
Buttered sourdough toast and fresh celery are great accompaniments.
