Three cups
Use the correct chocolate. It makes all the difference: Scharffen Berger mocha, 62 percent cacao; Scharffen Berger extra dark, 82 percent cacao; Scharffen Berger unsweetened, 90 percent cacao.
Chocolate Icing
5 ounces unsalted butter
5 ounces heavy cream
4 ounce whole milk
3.5 ounces sugar
7 ounces shaved mocha chocolate
1 ounce extra dark chocolate
3 ounces shaved unsweetened chocolate
Procedure
In a small stainless pot, combine butter, cream, milk, and sugar.
Bring to a boil.
Remove pot from heat.
Slowly add chocolate, stirring slowly with a wooden spoon until mixture is a smooth consistency.
